Ladies' Sleepover with Healthy Grub

Had the girls over for a sleepover and instead of eating junk food, we opted for a healthy menu. A few veggies and a few proteins turned into quite the spread. We are anticipating our 10 year high school reunion in a few weeks and for some reason that means we need to be thinner than ever. Don't you love our society?

I think we did pretty well. Maybe too much food, but hey; what's a celebration without too much food?

Dessert was graham crackers and fat-free whip cream frozen for about an hour. So good and so low in calories. It's the lighter version of this awesome ice cream sandwich sundae that I usually make.

I finished off the Birthday Feast with cookies instead of birthday cake. Why?

Last time, my dad and I were in NYC we fell in love with Levain Bakery cookies. They will change your life. Just check out the Yelp reviews. 600 people have taken time out of their lives to write reviews about how good these cookies are. So when I got home I did some research to find a copycat recipe and decided to try it out as a special treat for the birthday feast. It went well. It's hard to go wrong with Ghiradelli chocolate morsels, sugar, and cocoa. The verdict is that they were good, but they weren't Levain Bakery good. Oh well, I'm heading to NYC in November to bite into the gooey center of the holy grail of cookies. Until then these bad boys will have to do.

Fold Butter and Sugar

Fold Flour, Eggs, Cocoa, and Baking Powder

Blend Ghirardelli chocolate morsels by hand

Bake for 16 minutes

Enjoy!

Floating in ice cream, these cookies were superb, but to put ice cream on a real Levain Bakery cookie would be a sin.

As you know in my post Food = Love, my dad cooked a birthday feast for me back in April. So to share the love, I did the same for him. For Father's Day, I whipped up my new specialty, chocolate waffles.

Today, we celebrated his and my step-mom's birthdays. I tried to make it as nice as they did for mine. Key word, tried. My shortcomings were a lack of homemade bread and a last minute run to the grocery for ice cream, but all in all everything tasted great.

Prepping takes the most time

Got these the first week of the oil spill. Breaks my heart that I may never get these beautiful Gulf Shrimp again.

Paprika, Cayenne and Salt... Sauteed in Butter and Olive Oil

Smoked Sausage, Yellow Onions, Green Onions, and Garlic

Finish off with tomatoes and shrimp stock

Grits with butter and white cheddar cheese

Plate and garnish with Parsley

I am a terribly slow cook so it took me all day, but the finished product was so good and so worth it. Everyone, including my dad, loved it. The recipe comes straight out of Emeril's new cookbook, Farm to Fork, which I won from NOLA-Eats! I'll follow up this post with dessert!

Hard to believe most this dancing could happen in just one month. I've bunny hopped through Spring...literally.

A few years ago, I shuttered at the question, "What do you like to do for fun?" Because I found it really hard to answer. I yearned for a passionate answer lengthy with exciting, unusual sidelines. Today, I am still not sure that I am ready to proudly and sufficiently answer that question, but for now, I don't mind answering with, "I like to dance until at least 4am."

Anderson Cooper - 2010 Tulane Commencement Speech

Today, Tulane's Class of 2010 graduated, a class that decided to attend Tulane University directly after Katrina. I cannot imagine the uncertainty that they faced moving to New Orleans four years ago. I respect these graduates for their decision, and know the city is a better place because of it.

Anderson Cooper's address was an inspirational one with points that are very prevalent in my journey. Especially this one...

My birthday just passed, and I didn't post anything.

Guess I was having too much fun.

One of the ways we celebrated was by having the family over for lunch to blow the candles out.

My dad asked me what he should cook.

I put it off and couldn't really decide.

I mentioned, "I just don't know....maybe crabcakes or BBQ shrimp or desserts like apple pie or chocolate molten cake."

Well....

he cooked them all!

Aunt Denise's One-Bowl-Chicken-Salad-Wonder

I was sleeping at my Aunt and Uncle's house and was getting spoiled with a yummy yogurt parfait breakfast. Meanwhile, my Aunt starting throwing frozen chicken and whole eggs into a pot. I was like, "Whhaaaa?" She said, "Oh, I'm making lunch." I love simple cooking so here is the recipe.

Aunt Denise's One-Bowl-Chicken-Salad-Wonder

1/2 lb. frozen skinless chicken strips or breasts
3 eggs
cilantro as desired
1/3 c. Italian dressing
1 tbsp. of pickle relish
1 tbsp. mayonnaise
1 t. salt
1/2 t. pepper
Cajun Seasoning to taste

Throw frozen chicken and whole eggs in a pot of boiling water for 10 minutes and until chicken is tender.
Remove from heat. Peel eggs.
Combine all ingredients in a food processor. Taste and adjust seasonings as needed. Refrigerate until serving.

Optional additions if you want to get creative:

1/4 c. diced celery
2 tbsp. diced green pepper
2 tbsp. sliced green onions
1 tbsp. curry powder
1/2 c. watercress
1/3 c. pesto
1/2 red onion
1 apple, diced
1/2 tsp. garlic, minced
2 tbsp. almonds, chopped
1/4 tsp. coriander
2 tbsp. of mustard
1/2 c. tomatoes, quartered
